Speedy Microwave Arrabiata Pasta

A fast, fiery favourite, no stove required.

Need dinner in a hurry? This flavour-packed arrabiata pasta is quick, comforting, and comes together entirely in the microwave. Perfect for a cosy night in at The Quarters, this recipe is ideal for students, professionals, or anyone craving real food with minimal fuss.

Vegan-friendly, simple to make, and endlessly customisable, it’s proof that convenience doesn’t have to compromise on taste.

Ingredients

75g dried pasta (any shape)
1 garlic clove, finely chopped
1–2 tsp olive oil
200g tinned chopped tomatoes
1–2 tbsp tomato purée
½ tsp chilli flakes (adjust to taste)
1 tsp dried oregano
Small handful of olives, sliced
Handful of fresh spinach (optional)
1 tbsp grated Parmesan or vegan cheese alternative
Pinch of salt

How to Make It

1. Cook the pasta: Place the pasta in a microwave-safe bowl with a pinch of salt. Cover with boiling water and microwave for the packet time + 4 minutes, stirring every 2–3 minutes. Drain and set aside.

2. Make the sauce: In a separate microwave-safe bowl, combine garlic and olive oil. Microwave for 1 minute to soften. Add the chopped tomatoes, purée, chilli flakes, oregano, and olives. Microwave for 1.5 minutes, stirring halfway. Stir in spinach at the end to gently wilt. Let the sauce sit for 1 minute to thicken.

3. Mix and serve: Stir the pasta into the sauce until fully coated. Top with cheese or a vegan alternative and enjoy warm.

4. Optional twists: Add a spoonful of dairy-free yoghurt or cream for a silky finish. Leftovers? Store in the fridge and reheat in 2 minutes.
